Brunch-Cakes

Guaranteed a place at your weekend breakfast table and the fact that you can add pretty much anything you have in the fridge/freezer makes them even more of a winner in my eyes. Note these are savoury pancakes not sweet, something lacking in the vegan breakfast world! I find sweet options around everywhere but I don't have much of a sweet tooth so these win my heart with every batch. Plus you can freeze the cooked pancakes and toast/grill/fry them back to crispy life for those rushed mornings (everyday?).

SAVOURY BRUNCH-CAKES

You want 1-2 cups of veggies cut up nice and small for crunch and flavour in these, but if you only have a bag of frozen sweetcorn in the freezer then you're still in for a crispy treat! play around and find your family's favourite mix.

It's the rice powder that gives it the extra crisp, so if you leave that out, you'll still have lovely pancakes but they'll be missing the extra crispiness.

MAKES 8+ PANCAKES

PREP TIME 10 MINS | COOK TIME 20 MINS | TOTAL TIME 30 MINS

INGREDIENTS

- Corn oil (or any high cooking point oil)

BATTER MIX:

- 1 cup flour (1/2 cup wholemeal-1/2 plain)

- 2 Tbsp rice flour*

- 2 cups water

- 1 tsp ground white pepper

- 1 tsp salt

VEG MIX:

- 1/2 onion (chopped)

- 2 cloves garlic (crushed)

- 1 carrot (finely chopped)

- 1 tomatoes (chopped)

- 1 cup frozen sweetcorn

- fresh coriander (finely chopped)

- 1 fresh chili* (finely chopped)

METHOD

  1. Mix the dry ingredients together in a big bowl and add the water to form a nice thick but runny batter (you may not need all the water).

  2. Add all other ingredients to batter and stir.

  3. Heat oil in frying pans on med-high heat and spoon mix in to hot oil. Make them as big or small as you like (I use a ladle to get similar sizes).

  4. Fry the pancakes on one side until the bubbles on the batter have popped and pancakes look almost cooked from above (careful not to burn the bottoms) then flip over on to the other side. You're looking for crispy not just cooked. In my experience the pancakes don't want to move in the pan until they're ready.

  5. Keep pancakes warm in the oven until ready to serve. Serve with lightly dressed rocket salad, avocado and tomato salsa.... whatever you have and are in the mood for!
